Irish moss, also called carrageen, is a red seaweed found along the shores of the Atlantic that is used in the food industry as a natural thickening agent and stabilizer, especially in dairy products.

Irish moss has a long history of medicinal use for respiratory and digestive ailments and known to contain Vitamins A, E, F and K, calcium, potassium, and sulfur. Irish moss is commonly made into a gel and then incorporated into smoothies and vegan desserts.
